exceptionally, the original Norman expresses itself without ulterior motives, with

a clear idea: that of offering a current and creative cuisine

around 3 menus without choice, made from very beautiful products.

Here, as elsewhere, simplicity wins support, in the image of the

wolf and oyster tartare with caviar or pearly cod on its bed

of Japanese pearls, pepper artichokes in barigoule, lemon-lemon balm juice

and nasturtium flowers.
