The son of Nice restaurateurs, José Orsini has always been immersed in the kitchen.
His tenacity led him to work with Alain Ducasse for 5 years, then as second to Laurent Broussier at the "Palais Maeterlinck" (Cap de Nice) for 7 years, and to make a stint in the kitchens of Prime Minister Edouard Balladur.
Today at the head of the restaurant "Le Bistrot du Port" opened in 2000, he skilfully mixes simplicity and originality, such as the puff pastry of sweets of veal, or more noble, the scramble of truffles; its grilled "country" sar is presented topped with thin slices of tomato and lemon accompanied by a very nice ratatouille almost reduced to the state of compote. A masterwork that he offers every day to his clients.
You will understand, this is a beautiful address to taste the fish of the day, but not only! it delights us with delicious Mediterranean cuisine where the slate changes every day.
