A culinary innovation in Nice that only a local child could create; it was Chef Luc Salsedo who came up with the idea, somewhat by chance, as often with the most beautiful inventions... and the Socca Chips has been a huge success ever since!

Luc Salsedo is a child of the country of Nice, in love with southern cuisine. After an apprenticeship with renowned Chefs, Hervé Kobzi, Christian Plumail, and Daniel Hetlinger, he performed his military service in the kitchens of the Elysée under the orders of Joel Normand. Back on the Côte d'Azur, it is in Monaco at the "Louis XV" that he officiates for two years, alongside the big names of French cuisine, Alain Ducasse and Franck Cerutti. After a stint in London with Anthony Demetry, he returned to the shores of the Mediterranean.
Drawing on his various experiences, he opened his restaurant "Luc Salsedo" in Nice, with an original concept: "a menu menu" changed every ten days according to the market and the seasons, as well as suggestions for slate.
