Moored since 1862 in the port of Nice, backed by Mont Boron, "La Réserve de Nice" bears its name from the fish ponds that once stood at its feet.
It is an emblematic place, well known to all the people of Nice. The place was immortalized by the shots of the famous Nice photographer Jean Giletta; "The reserve" is part of the Côte d'Azur heritage.
Its privileged location with a panoramic view makes it a destination of choice for lunch on the terrace, feet in the water, or dinner with a breathtaking view of the bay of Nice.

The Child of the Country
Jérôme is a pure Côte d'Azur native, as you sometimes meet on the steep paths of his home valley, the Esteron.
With a frank smile, a solid handshake, the humility of the people of the High Country and a passion for fishing, he expresses through his innovative Mediterranean cuisine this paradox of a terroir shared between the Sea and the Mountains.
Trained in prestigious establishments on the Côte d'Azur such as the Negresco under the tutelage of Dominique Le Stanc, La Table du Marché by Christophe Leroy or at the Palais de la Méditerranée, during the Bruno Sohn era, this lover of the region naturally found his place at the Réserve de Nice almost 10 years ago.
It was therefore obvious that he would one day take the helm of the kitchens of this establishment dear to the hearts of the people of Nice.
His keen eye for photography helps him to create precise dishes, extremely graphic but which never forget the primacy of taste, giving pride of place to Mediterranean products. "La Pomme Blanche", a culinary poem or its "Gambas qui fricotte avec la courgette" are already the sign of an uncompromising commitment to always make the Reserve part of the gastronomic environment of the Côte d'Azur.

Celery ball, tangy and crumbled crab heart, Granny Smith apple/tarragon.
The fried prawns with the zucchini country
Fennel and prawn aioli, tomato confit and crispy flower.
"Mérenda" in the vegetable garden
Creamy tuna, crispy spring vegetables like a Niçoise salad, crispy socca.
Roasted wild sea bass with yuzu butter, green asparagus in royale and meunière, purple artichokes and chanterelles.
Whole Blue Lobster in Harlequin ravioli, casserole vegetables, crushed tomato flavored with marjoram, lobster bisque emulsion.

Devil condiments, epigram with ancient mustard, bayaldi of candied vegetables.
