Michel Devillers doesn't mess with the quality of the product. It must be said that, son of butcher-processor, grandson of market gardeners and cousin of a restaurateur, he was very quickly introduced to the trades of mouth.After a first stint as Party Chef at the Hôtel de Ham in the Aisne (1 star in the Red Guide), he became Party Chef at Lenôtre at Pré Catelan in Paris (2 Michelin stars).
In 1982, at the age of 22, the Troisgros brothers hired him as Party Leader in Roanne (3 stars). He perfected his style, before becoming Chef de cuisine of the "Dents de la Mer" which has long been a mythical establishment in Nice.
And he flies on his own to the Port of Nice taking the controls of the beautiful establishment "L'Ane Rouge". Since then, every day, he takes the time to choose the producers with whom he forges strong links to offer all the flavor of the country's products on the plate.
