* A local child and descendant of a family of chefs, Stéphane left to make his arms in Paris at an early age. After an apprenticeship at Pierre Vedel (Michelin-starred), he continued atthe Hôtel le Crillon (Place de la Concorde), then at Gérard Mulot to learn pastry. Second in the kitchen at Club Privé France America (on the Champs Elysees), a few years later, he is at the head of the family restaurant La Foux - Le Bistrot d'Alex (in Saint Germain des Prés) - canteen appreciated by politicians, journalists, publishers and artists - that he will keep eight yearsmaking a name for himself in the profession (Michelin Guide, Gault Millau, Le Pudlo, Lebey...).
